Lopputulos on ihmeen kuohkea verrattuna joihinkin muihin cupcakes- resepteihin. Hiukan sovellusta reseptissä, mutta se on tässä melkein kuten kirjassakin... This is the recipe for the Valentine's Day cupcakes below. It is from the book called sensational cupcakes by Alisa Morov. The end result is quite a bit fluffier than most of the other cupcake doughs. I adjusted couple of little things, but this one is almost as found in the book.
Chocolate-Vanilla Cupcakes (24 pieces)
75 g cocoa powder
300 ml boiling water
1 teaspoon vanilla extract (I used 3tsp vanilla sugar)
280 g plain flour
300 g sugar
1 tablespoon baking powder
3/4 teaspoon salt
190g melted butter
Preheat the oven to 175 degrees. Mix the cocoa powder and boiling water together in a small bowl until smooth. Set aside. Mix the eggs, a quarter of the cocoa mixture in another bowl. In a third bowl, combine the dry ingredients. Using an electric mixer, add the melted butter, the dry ingredients and the rest of the cocoa mixture to the egg mixture and beat slowly until all the dry ingredients are moist. Increase the speed to medium and beat for 1-2 min.
Pour the batter into cupcake moulds lined with paper cases. Bake for 20-25 min. Let cool.
Frosting - Vanilla buttercream
(I reduced the amounts of the ingredients little bit, so this is what I used.)
180 g butter (soft, but not melted)
ca. 650 g icing sugar
100 ml double cream
liquid food coloring
Using a mixer, mix the butter and half the sugar for 30seconds, then add the cream and vanilla extract. Mix until creamy. Add few drops of the the food coloring. Gradually add the rest of the sugar, beating well after each addition. Continue to beat until the frosting is thick. Decorate the cupcakes.
