One more potager story: Beetroot


Tässä vielä viimeinen keittiökasvimaapostaus... 

Tyttö syö Suomi-lomilla aina purtsia ja pertsiä. Joka aterialla. Aamupalavoilevällä, päiväruoan kanssa ja iltapalavoileivällä... Itse en ole kummastakaan ikinä innostunut, enkä tietysti lapsen toivo syövän kuukausikaupalla majoneesipohjaisia lisukkeita joka aterialla, joten minulle ei ole tullut aiemmin edes mieleen, että helppotekoisiahan ne ovat. Nyt kun siellä kasvimaalla oltiin, niin tyttö innostui punajuurista niin, että päätti saman tien tehdä itselleen purkillisen punajuurisalaattia. Keitimme neljä pestyä punajuurta vedessä kuorineen (iso ripaus merisuolaa mukaan). Siihen upposikin ainakin tunti, jos ei ylikin. Jostakin luin, että kesäisin ne kypsyvät nopeammin kuin talvella, mutta ei se keittäminen kovin nopealta tuntunut... Lopulta kuitenkin päästiin siihen pisteeseen, että punajuuret olivat pieninä kuutioina. Ensin sekoitettiin mukaan suolaa, sokeria ja punaviinietikkaa, kunnes niissä alkoi olla säilykepunajuuren makua (päättelin, että sillä tavalla saa maun helpommin kohdalleen). Ja sitten vain muutama ruokalusikallinen perusmajoneesia sekaan. Ja hiukan lisää suolaa ja sokeria, kunnes tyttö oli sitä mieltä, että maku on kohdallaan. Tarkka juttu, kun makumuistona oli Forssan punajuurisalaatti. ;)

This is the last potager story...

My daughter loves to eat majonese based beetroot and potato salads when we visit Finland. They are both rather common and often served as side dishes, but she has no problems starting and ending her day with a sandwich covered with the beetroot salad... I never liked them myself nor do I find them healthy options for children either as they really contain so much of majonese. Yet, I get it. Holiday is one thing, daily life another. Anyway, I guess since I never missed those side dishes here in Belgium, it had never even occurred to me that they are so easy to make at home. Now that we visited the potager and found out that there were many beetroots, my daughther got an idea that she could make some salad for herself. We cooked four washed beetroots in lots of water and some salt. They took forever to get tender! Once they were cooled down we peeled and diced them. Then we added salt, sugar and some red wine vinegar and then few spoonfuls of basic majonese. Then just some more sugar and salt, until she was happy with the flavor. It was quite an exact thing as we tried to get as close as possible to the factory made flavor she had in her mind. ;)
