Our daughter baked some meringues few days ago. The recipe and the coloring idea came from a magazine, but I must confess I was bit suspicious about it to start with, because the liquid colors could be added only to the ready "foam" which I was afraid was in danger of loosing its texture if it had to be mixed for another time. But I was wrong! She just beat the mix of 2 egg whites and 100g sugar for quite a while. I guess that was the secret to almost overdo it, so that it was throughout rather 'solid' in the end. Then she divided it into three bowls, mixed few drops of color in with a spoon in each of them and piped the meringues on the baking parchment. Then they were put to oven for one and a half hours in 100 Celsius degrees. The meringues looked and tasted like at the bakery!
